1/2 c. boiling water
1/2 c. dry jello powder berry flavored
1/2 c. egg whites
1 tsp. vanilla
2 T. lemon juice
1 1/2 c. sugar
1 1/2 c. fresh berries (strawberries, blackberries, raspberries or a mixture)

Directions:

Mix jello and boiling water. Stir until dissolved. In a mixer bowl, add rest of ingredients. Mix on high until stiff and fluffy. (It may take up to 10 minutes so don't quit too soon.)

This may be served several different ways. You can put it directly into dessert cups and serve garnished with fresh berries, put it in a pre-baked pie shell and garnish with fresh berries and whipped cream or serve as squares. To do this, I make a graham cracker crust and press it into a 9x13 pan then top with the berry mixture. You may serve it fresh (keeps refrigerated for a couple of days) or it also freezes and keeps REALLY well. You may then serve it as a "frozen" dessert (our favorite way) or thaw and serve.

If you wish to serve frozen, do not garnish with berries until ready to serve. Frozen berries are hard to cut for serving and will also look shriveled.
