1 head of romaine washed and cut up.
1/4 c. shredded Parmesan cheese
Croutons



DRESSING:

1 c. olive oil mayonnaise (not low-fat)
2-3 cloves of garlic
1 T. lemon juice
2 T. Worcestershire sauce
1/4 c. of shredded Parmesan cheese
1/4 tsp. of black pepper
1 T. of sugar
1 tsp. fish sauce or 2 tsp. of anchovy paste

Directions:
Directions:
Wash and cut up lettuce. Allow it to dry on a paper towel while mixing dressing.

To mix dressing, place all ingredients in a food processor and blend until smooth. At this time you may add more garlic, lemon or anchovy paste depending on your preference. In large bowl mix together lettuce, croutons, Parmesan cheese and desired amount of dressing. Place remainder of dressing in a container for next time. Keeps well in the fridge. Recipe may be doubled and adjusted depending on your taste.
