1 medium -sized onion chopped
3 T Olive oil
1 1/2 lb ground beef
1 clove garlic
2 cans (8 fl oz) tomato sauce
1 can (6 oz) tomato paste
1/2 c each dry red wine and water
1 t each salt and oregano
1/2 each pepper and sugar
12 oz lasagna noodles
1 lb ricotta cheese
1/2 lb mozzarella cheese, thinly sliced
1/2 c shredded Parmesan cheese

In a large frying pan that has a cover, saute onion in oil until soft; add beef and garlic, and cook stirring, until meat is brown and crumbly. Stir is tomato sauce, tomato paste, wine, and water. Add salt, oregano, pepper and sugar, stirring until mixed. Cover pan and simmer slowly, about 1 1/2 hours.
Meanwhile cook noodles in boiling salted water as directed on the package, until tender, about 15 minutes. Drain thoroughly, rinse with cold water, and drain again.
Arrange about 1/3 of the noodles in the bottom of a 9 by 13-inch shallow casserole dish. (lay one layer of noodles lengthwise in the dish and the next layer crosswise. Alternate this way as you continue to arrange the dish) Spread 1/3 of the tomato sauce over the noodles; top with 1/3 of the ricotta and mozzarella cheese. Repeat this layering tow more times. Top with the Parmesan.
Bake uncovered in a 350º oven for 30 minutes.

Spicy variation: Substitute 1/2 lb of Italian sausage for 1/2 lb of the beef. Remove the sausage casing, chop and brown with the beef.

My BFF Brynn shared this recipe with me. I have made lasagna for years, but this is definitely the best I have ever made. I made it for a dinner party a few years ago when they were visiting and everyone loved it. (Pat and Sandy, Henry and Andrea, Brynn and Dave and Jay and Kathy)
