2 T. oil
2 garlic cloves
1 green pepper
1 red pepper
1 orange pepper
1 1/2 c. sliced mushrooms
1/2 c. chopped onion
1 can diced tomatoes (undrained)
1 can tomato sauce
2 T. chili powder
2 tsp. sugar
1 tsp. cumin
1 can kidney beans (drained)
2 c. sliced zucchini
1 (10oz.) pkg.frozen corn
grated cheese to top

Directions:
Directions:
Heat oil in skillet & saute: garlic, pepper, mushroom and onion. Add tomatoes with liquid, tomato sauce, chili powder, sugar and cumin. Heat to boil; reduce heat to low. Add beans, zucchini and corn. Simmer uncovered until zucchini is tender, 10-20 minutes. Serve topped with cheese. Great with tortilla flour shell/bowls or tortilla chips.
