4 oz. butter
3 lbs. peeled onion, sliced 1/8" thick
1 1/2 tsp. ground pepper
2 T. paprika
1 bay leaf
3/4 cup flour
1 c. white wine
2 tsp. salt
3 quarts beef or vegetable broth
shredded Swiss or Gruyere cheese

Directions:
Directions:
Saute onion in melted butter on medium low heat for 1 1/2 hours. Add pepper, paprika, bay leaf, flour, salt and wine and cook for additional 10 minutes. Add broth and simmer for 2 hours.

To serve: fill fireproof bowl with soup, top with French bread and Swiss or Gruyere cheese. Place under broiler for five minutes or until cheese is melted and bubbly.
