2 eggs
1/3 c olive oil
2-3 T lemon juice
1/2 c grated Parmesan cheese
1 T prepared mustard
Few grains pepper
1 1/2 cloves garlic, pressed through garlic press
3 anchovy fillets, optional (yes for Kathy)
3 quarts crisp, dry, torn, romaine leaves
Homemade or store bought croutons

Place eggs hot water for 1 minute. Remove and beat in a bowl with a wire whip of rotary beater. Add olive oil, lemon juice, Parmesan cheese, mustard, pepper, garlic and anchovies, if desired. Beat together until well blended. Put into refrigerator until ready to serve. Place the prepared romaine in a salad bowl and toss with the dressing and croutons.
