Fresh ginger
Juice of 3 lemons, keep the rinds
1/2 cup honey
2 quarts water
Cheesecloth

Directions:
Directions:
Bring water to a boil. Peel a 2" to 3" slice of ginger (to taste). Grate ginger over a fine mesh grater. Juice the lemons. When the water boils, add the lemon juice and rinds, ginger juice and pulp.

Let steep for 20 minutes. Strain the mixture through the cheese cloth. Discard the lemons and ginger pulp.

Add the honey and stir until dissolved.

Personally, I've found that 1/2 cup of honey is almost too sweet, so adjust according to taste.

This is very refreshing and a spicy alternative to regular lemonade. Also a great adult cocktail ~ just add rum!
