1 8 lb. watermelon peeled, cut into 1 inch pieces (about 16 cups)
1 c. fresh lemon juice
2/3 c. sugar
1/2 c. good vodka
6 T. creme de cassis
1/4 c. chopped fresh mint
Salt to taste

Directions:
Directions:
Place watermelon in a large bowl. Whisk fresh lemon juice and sugar in medium bowl until sugar dissolves. Whisk in vodka and creme de cassis. Season mixture to taste with salt. Pour mixture over watermelon. Cover and chill at least 1 hour and up to 2 hours. Sprinkle with chopped fresh mint and serve.
