1/2 cup asparagus
!/2 cup soy sausage, cooked and crumbled
!/4 cup roasted red peppers, chopped
1 cup egg beaters or egg whites
salt and pepper to taste
hot sauce (optional)
fresh herbs (optional)

Directions:
Directions:
Preheat oven to 375F. Spray a 6 muffin pan with olive oil or nonstick spray. Place a small amount of sausage , asparagus and red pepper inside each muffin cup. Season the egg beaters with salt, pepper, hot sauce and herbs. Pour into muffin cup almost to the top. BAke for 30-40 minutes or until center is set.

YOu can add other vegetable and turkey bacon. Make sure you drain your vegetable if you use squash, spinach or mushrooms.
