4 ounces Chicken breast(s) poached in broth and cubed
1/4 cup celery coarsely chopped
1/2 cup of artichoke hearts (optional)
1 tablespoon sliced almonds coarsely chopped
tablespoons chicken stock or low-fat low sodium chicken broth
2 teaspoons dijon mustard
1 teaspoon fresh parsley finely chopped of fresh tarragon
salt and pepper to taste

Directions:
Directions:
In a medium mixing bowl, add chicken, celery, artichoke hearts and almonds and ix together.
Whisk dijon mustard and chicken stock until well blended. Combine mustard mixture to chicken and mix well. Add parsley or tarragon and salt and pepper to taste.
