2 softened cubes "I Can't Believe It's Not Butter"
1 c. brown sugar, or Splenda© equivalent
1 c. sugar, or Splenda© equivalent
2 c. peanut butter
1 1/2 c. Egg Beaters©
3 tsp. baking soda
1 T. vanilla
9 c. quick oatmeal
2 c. chocolate chips
1 c. butterscotch chips
1 c. shredded coconut
1 c. raisins

Directions:
Directions:
Preheat oven to 350º. In a VERY LARGE bowl cream egg, sugars, peanut butter, vanilla and soda. Fold in coconut, raisins and chocolate/butterscotch chips. Stir in oatmeal. Pack tightly into a 9x13 baking pan. Bake approximately 35 minutes; do not over-bake. Cool and cut into small portions. (These freeze well)
