1 C Water
2 C Shredded green cabbage
4 C Warm mashed potatoes
6 Green onions
1 TBS Chopped fresh parsley
1 tsp salt
1/2 tsp pepper
2 TBS butter or margerine, sliced
1/2 tsp paprika

Directions:
Directions:
1) Preheat Oven to 375. Bring water to boil in medium saucepan; add cabbage. Cover; cook unti tender, about 5 minutes. Drain well.

2) Combine cabbage & mashed potatoes in large bowl; mix well. Add green onions; parsley, salt & pepper; mix well.

3) Spoon potato mixture into a baking dish sprayed with Pam.

4) Arrange butter slices evenly over potato mixture. Sprinkle with paprika. Bake until heated through, about 15 minutes.

If you do not have leftover mashed potatoes, you can save time by using frozen mashed pototoes.

(Make Ahead) You can prepare this dish up to 24 hours ahead & refrigerate. Reheat at 325º for 20 minutes.

For a hearty one-dish meal, add 1 cup chopped ham during step 2.

Also, Leftover Irish potatoes make a great soup. Mix 1 cup chicken broth & 1/2 cup milk or cream in a saucepan; stir well. Heat & serve.
