artichokes
Italian bread crumbs
fresh minced garlic
grated parmesan cheese
2 eggs
salt and pepper
chopped parsley

Directions:

Prepare bread crumbs ahead of time, put in garlic, cheese, 2 eggs, salt and pepper, chopped parsley.

Cut off prickly part of bottom of artichoke, cut off some of the tough outer leaves. Turn artichoke over and bang the pointed top on counter to split leaves apart slightly.

Push bread crumb mixture down into artichoke, place in pan with water halfway up, boil on stove to cook. You can put cover on partway. Artichokes are done when you can scrape off the meat with your teeth.

You can also cook these in a pressure cooker, but I am not sure of the specifics of how to cook it. They are time intensive to make, and our Grandma Mag made them the best.
