Flour tortillas
Grated Monterey cheese
Jack Cheese
Green onion
Meat (if desired)
SAUCE
1/4 C. butter (melted)
1/4 C. flour
2 C. chicken broth
1 C. sour cream
1 C.Green chilies

Directions:
Directions:
Fill flour tortillas with grated Monterey cheese & 1 T green onion. Roll, place in pan with seam side down. Make sauce with butter, flour, chicken broth. Cook until thick, add sour cream & chilies. Pour over tortillas. Bake @ 350º 20 min.

We usually add left over meat, turkey, chicken, chorizo, beef or cooked wild game. On Mexican night we make the enchiladas, tacos with all the fixings. homemade refried beans & fresh cooked corn chips with guacamole (See recipe) & salsa.
Start your meal with Margaritas & end with Key Lime pie for dessert. Ole!
