4 c. whole wheat bread cubes or cinnamon raisin bread cubes (about 8 slices)
4 eggs, slightly beaten
2-3/4 c. milk
1/2 c. firmly packed light brown sugar
1 1/2 tsp. ground cinnamon
2 tbsp. lemon juice
whipped topping
Lemon Raisin Sauce


Lemon Raisin Sauce:
1/2 c. sugar
1/4 c. firmly packed light brown sugar
2 tbsp. cornstarch
3/4 c. water
1/4 c. lemon juice
1/4 c. raisins
2 tbsp. butter

Directions:
Directions:
Preheat oven to 350º. Arrange bread cubes in lightly greased 9-in. square baking pan. In medium bowl, combine eggs, milk, sugar, and cinnamon; mix well. Add lemon juice; mix well. Pour over bread cubes. Bake 45 minutes or until knife inserted near center comes out clean. Serve warm with whipped topping and lemon raisin sauce.


Lemon Raisin Sauce:
In small saucepan, combine sugars and cornstartch. Gradually add water and lemon juice; mix well. Over medium heat, cook and stir until mixture comes to a boil. Reduce heat; continue cooking and stirring 3 to 4 minutes or until thick and clear. Stir in raisins and butter. Serve warm over bread pudding. (Makes about 1 1/2 c.)
