1/3 c. couscous
2/3 c. boiling water. Add couscous. Take off heat. Stir in fresh snipped parsley.
Sauce prep:
1/2 c. orange juice
2 T water
1 tsp cornstarch
1/2 tsp instant chicken bouillon granules
1/4 tsp dried basil
dash of pepper
* make above sauce in microwave, stir and cook til thickened.
Then: 1/2 lb. pork tenderloin
spray coating

Cut pork into 6 equal slices. Lightly pound slices with flat side of meat mallet. Spray pan & preheat pan over med heat of stove. Cook 3 min. Turn meat & cook 2 min longer. Pour sauce over meat, serve on top of couscous. Garnish with orange peel & basil.
