1/2 c whole wheat flour
1/2 c all-purpose unbleached flour
3 T brown sugar
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt

1 c buttermilk
1 egg, lightly beaten
1 T unsalted butter, melted
1 large ripe banana - smashed

maple syrup and chopped walnuts, for serving (optional)

Directions:
Directions:
Mix dry ingredients and wet ingredients separately. Add wet to dry and mix just until moistened. Cook on preheated griddle until done.

Serve with maple syrup and walnuts, if desired.

My boys love this recipe. I mix ahead the dry ingredients and store in a ziplock bag. It makes the crazy school morning a lot easier!
