3 eggs
1 cp granulated sugar
1/2 cp lemon juice
1 tbsps grated lemon peel
1/4 cp butter, cubed
1 pkg (1.9 oz) frozen miniature phyllo tart shells, thawed
fresh raspberries, mint or whipped topping for garnish

Directions:
Directions:
1) In a small heavy saucepan, over med heat, whisk the eggs, sugar, lemon juice, and peel until blended.
2) Add butter, cook, whisk constantly; until mixture thickens and coats the back of a metal spoon.
3) Transfer to a small bowl; cool for 10 mins.
4) Cover and refrigerate until chilled.
5) Just before serving, spoon custard into tart shells.
6) Garnish with your favorite and refrigerate leftovers.
