1 pkg (15 oz) refrigerated pie pastry
2 tsps flour
1 egg, lightly beaten
1/2 lb sliced bacon, cooked and crumbled
1/2 cp ricotta cheese
1/2 cp shredded cheddar cheese
1/2 cp shredded mozzarella cheese
1 small onion, finely chopped
1/8 tsp salt
dash of pepper
dash of cayenne pepper

Directions:
Directions:
1) Sprinkle each pastry crust with 1 tsp flour; place floured side down on a lightly floured surface.
2) Cut 12 circles from each crust, using a 2 1/2 inch round biscuit cutter.
3) Press dough onto the bottom and up the sides of miniature muffin cups coated with cooking spray; set aside.
4) In a small bowl; combine the remaining ingredients.
5) Spoon about 1 tbsp mixture into each prepared crust.
6) Bake 400f for 14 - 18 mins or until set.
7) Cool for 5 mins before removing from pan to wire rack.
8) Serve warm.
