1/4 cp butter, softened
2 tbsps confectioners sugar
1/4 tsp vanilla extract
1/2 cp flour
dash of salt
filling:
1/4 cp sugar
2 tsps cornstarch
2 tsps flour
dash of salt
3/4 cp milk
1 egg yolk, lightly beaten
1 tbsp butter
1/2 tsp vanilla extract
1 1/2 cps fresh sliced strawberries
topping:
4 oz cream cheese,softened
1/4 cp confectioners sugar
4 tbps flaked coconut, divided
1/2 cp heavy whipping cream
fresh mint and additional strawberries, for garnish

Directions:
Directions:
1) In a small bowl, combine butter and confectioners sugar; beat in vanilla.
2) Add flour and salt; mix well.
3) With lightly floured hands; press onto 7 1/2 inch pizza pan; build up edges slightly.
4) Bake 350f for 15 to 20 mins or until edges and bottom are lightly browned.
5) Cool on wire rack for 15 mins.
6) In a small saucepan, combine sugar, cornstarch, flour and salt.
7) Gradually stir in milk, until smooth.
8) Cook and stir over med heat until thickened and bubbly.
9) Reduce heat; cook and stir 2 mins longer.
10) Remove from heat.
11) Gradually stir 2 tbsps hot filling into egg yolk; return all to pan, stirring constantly.
12) Bring to a gently boil; cook and stir 2 mins longer.
13) Remove from heat.
14) Gently stir in butter and vanilla.
15) Cool for 30 mins without stirring.
16)Pour over crust and top with berries.
17)In a small bowl, combine cream cheese, confectioners sugar, and 2 tbsps coconut until smooth.
18) In another bowl, beat cream on med speed until soft peaks form, fold into cream cheese mixture.
19) Carefully spread over strawberries.
20) Toast remaining coconut and sprinkle over topping.
21) Garnish with mint and berries.
22) Chill for atleast 4 hrs.
