3 sticks butter
3 medium onions chopped
3 ribs celery chopped
2 bell peppers chopped
1/4 c flour
4 T chopped parsley
3 lbs. crawfish tails
1 qt. half and half
1 lb. velvetta cubed
2 T Jalapeno Peppers chopped
3 cloves garlic crushed
salt
pepper
Parmesan cheese
1 lb. noodles

Directions:
Directions:
Melt butter in large heavy saucepan. Add onions, celery & bell pepper. Cook 10 minutes until clear. Add flour - blend in well - cover & cook 15 minutes, stirring occasionally. Add parsley and crawfish tails. Cover and cook 20 minutes stirring often. Add cream, cheese, jalapeno peppers, and garlic. Mix well. Salt and pepper to taste. Cook covered on low heat 20 minutes stirring occasionally. Prepare noodles. Mix noodles with sauce. Put in baking dish. Sprinkle parmesan. Bake 12 minutes at 350. Serves 12 people.
