6 lg whole boneless breast-halved,
2-141/2 oz- cans chicken broth
2-14 oz- cans quarter artichoke hearts-drained
2 T butter
12 oz fresh mushrooms-sliced
1 lg red bell pepper-diced
1/3 c butter
1/2 c flour
1/4 tsp salt
1/8 tsp pepper
1 c half and half
1/2 c fresh grated Parmesan cheese
2 T dry sherry
1/2 tsp rosemary

Directions:
Directions:
Simmer chicken in broth,15-20 minutes until mostly cooked. Put chicken into 9x13 pan, pour artichokes on top.
Saute mushrooms and red pepper in 2T of butter, set aside.
In a small pan melt1/3 c butter and blend in flour, salt and pepper, gradually stir in 1/2 & 1/2 and 11/2 c reserved broth, boil 1 min stirring. stir in parm. cheese until melted, stir in sherry and rosemary.
pour over chicken and artichokes, top with sauteed veggies.
Bake 325º Until hot and bubbly 15-20 minutes
