1/2 c. butter, softened
1 1/2 c. powdered sugar
6 eggs, separated
1 1/2 squares melted unsweetened chocolate
1 c. chopped pecans
1 tsp. vanilla

Directions:
Directions:
Cream butter and powdered sugar until smooth and well-mixed. Drop the egg yolks in one by one, stirring well after each. Add melted chocolate, nuts, and vanilla. Beat the 6 egg whites until stiff, then fold in.

Put between layers of sponge cake.

This spectacular dessert was a part of many special occasions during my childhood. Steve Reinking told me he always requested it for his birthday cake. The eggs aren't cooked, so there would be a risk of salmonella. We never knew that; never worried; and no one got sick. However, I recommend that pasteurized eggs be used to avoid the risk.
