1-1/2 Punds ground beef
1 (14-oz)can enchilada sauce( old el paso works the best found in mexican food aisle of store)
3 tablespoons sliced scallions
1 (15oz) can of corn, mexican style, with the red and green peppers
2 cups shredded cheese ( 4 cheese flavored mashed patatoes
Just use one
1 (4oz) can of chopped chilies

Directions:
Directions:
1. brown the beef; drain. Place in bottom of 2 or 3 quart casserole
2. Stir enchilada sauce and scallions into beef
3. Spread corn over beef mixture
4. Sprinkle cheese over corn
5. Make the potatoes on stove-top, following box instructions. When potatoes are ready, stir in can of chilies
6. Spread potato/ chilie mixture over cheese.
7. Bake, covered for 30 minutes at 350- degrees
8. Remove cover and bake for additional 10 minutes until mixture is bubbly and just starting to golden
