2 whole chicken breasts, split
1/4 tsp salt
1/4 tsp freshly ground black pepper
1/4 tsp thyme
1 Tblsp oil
1 large apple, cored and sliced
2/3 cup apple juice
1/2 c chopped shallots
1/2 c whipping cream
2 Tblsp apple brandy or apple wine

Season chicken with salt, pepper and thyme. In large skillet, brown chicken in oil. Cover and simmer for 20 minutes. Place apple slices on top. Cover and cook 10 minutes longer or until chicken is done and apples have softened, but are not falling apart. With slotted spoon, remove chicken and apples to serving platter and keep warm.

Pour drippings into glass measure; let stand a few minutes for the fat to rise to the top, then remove fat. Return drippings to pan. Add apple juice and shallots. Bring quickly to a boil and cook until sauce is reduced by almost half and begins to look like syrup. Stir cream and brandy and heat until sauce starts to thicken. Spoon over chicken and apples and serve immediately. Garnish with paprika and parsley.
