1lb Brussel Sprouts halved or quartered
Your favorite spice blend - I prefer the red-pepper, garlic and herb blend- use liberally
6-7 cloves of garlic- minced half of them and dice the rest( it seems like a lot, but the flavor really cooks down)
Enough olive oil to lightly coat the B-Sprouts

Set your oven to 425 degrees.
Lightly coat your cut B-Sprouts in oil.
Apply seasoning- you're going to need a lot in order for the flavors to come out.
Mix half of the garlic in with the seasoned B-Sprouts.
Spread the B-Sprouts onto a cookie sheet covered in aluminum foil.
Meticulously place the diced garlic on top of the B-Sprouts- it seems silly and tedious, but it really helps infuse the flavor into the B-Sprout.
Roast in the oven for about 15 min- then take them out and turn them over- put them back in the oven until they're cooked to your liking.
Check about every 7 minutes. The longer you leave them in, the crispier they get. I like them when the centers are a bit mushy- and the outer leaves have just started to crisp.
At this point they have lost their bitterness, and have developed a nice, almost caramelized, sweetness. They tend to lose this sweetness as they get crispier.

I consider myself an advocate for BRUSSEL SPROUTS. One of my many missions in life is to help people get past their fear and hatred of brussel sprouts. I strongly believe that Brussel Sprouts have gotten a bad rap in the media. At an early age children are taught to hate brussel sprouts by their favorite cartoon characters. I will admit that there is certainly a WRONG way to cook brussel sprouts- or as I affectionately call them- "B-Sprouts". Cooked inappropriately, they can be horrendous-which is probably why they have such a bad reputation. Follow my guidelines and you're sure to fall head over heals for these little, green, balls of deliciousness! It took me six months to convince my sister to try my B-Sprouts. Every time I professed my love for them she thought I was crazy. Once she tried them, however, she could not get enough of them.
