Ingredients: 1 large onion, chopped very fine 8 cloves garlic, minced 1/4 cup olive oil 2 bay leaves 2T sugar (more to taste) 1 tsp salt (more to taste) 2 T Italian Seasoning 1 T.dried basil 2 (28oz) cans whole tomatoes, crushed 2 (28oz) cans tomato puree (or sauce) 2 (28oz) cans crushed tomatoes 1 (6oz) can tomato paste -2 cans of water 1 cup good red wine, or chicken stock any of the following, one pork and one beef is a must: beef short ribs, beef stew meat, sweet Italian link sausage, cut up pork roast and/or meatballs to add at end, 1 c Parmesan cheese

Directions:In a very large heavy bottomed pan quick cook meats on high to brown (except meat balls).Saute onion in olive oil, then add garlic and saute another minute or two. Add all other ingredients except cheese and meatballs. Stir constantly over medium heat until begins to simmer, then turn way down and cook at least 5 hours, stirring often. Season to taste with more spices. Add cooked meatballs and their pan juices the last hour of cooking along with the Parmesan cheese. |

Notes: this is a Sunday tradition, keep lots of crusty bread for dipping and tasting throughout the day. Bob says you HAVE to use Progresso or Contadina brand tomatoes. It took me 8 years to get a "Wow, that's almost as good as my mom's" from my Italian Man! I portion out some without the meat to use in other dishes-freezes well.
