1 1/4 C. unprocessed wheat bran or oat bran
3/4 C. flour
3/4 C. whole wheat flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
2 large eggs
2/3 C. skim milk
1/2 C. packed light-brown sugar
1/3 C. vegetable oil
3/4 C. finely grated carrots (about 2 med. carrots)
3/4 C. raisins (optional)

Directions:
Directions:
Whisk together wheat bran, flours, baking powder, soda, salt and cinnamon. Make well in center of flour mixture. In small bowl, whisk together eggs, milk, brown sugar and oil. Stir in carrots and raisins. Add egg mixture all at once to flour mixture. Using fork, stir just until mixture is moistened. Spoon 1/3 C. batter into each of 12 lightly greased muffin tins.

Bake 375º for 16 to 18 minutes or until toothpick inserted in center comes out clean. Cool on wire rack for 5 minutes and then remove from muffin tins.
