4 navel oranges
2 cups sugar
1 cup water

Directions:
Peel the oranges carefully, trying to do so in quarters. Then cut the peel into 1/4 inch strips. Place in pan and cover with 2 quarts of water. Boil for 5 minutes, drain quickly, then repeat 3 more times to remove the bitter tast of the peel. Drain peel on paper towels. Combine sugar and water and boil until clear. Add peel and cook over low heat for 10 minutes. Cover and let stand overnight. Then cook again over low heat until most of the sugar is absorbed, watching to avoid scorching. Lift the peel from the syrup and roll in sugar. Store in container with loose lid.
