2 Chicken breast halves
1 tsp. Knorr chicken crystals
1 1/2 cups diced celery
1 1/2 - 2 cups red or green seedless grapes, cut in half if grapes are large
1/2 cup toasted pecan halves (or break in half)
1/2 cup or more mayonaise
1 T mild curry powder

Directions:

Cut chicken breasts in half, cover with flavoring and poach with a little water till done (15-20 min.) If not using flavor crystals, replace water with a little chicken broth and a little salt and poach. Let cool and cut into bite-sized pieces. Add celery, grapes and nuts. Mix curry powder into mayo and add to salad. If too dry, add more mayo. If more curry flavor is needed, add a bit more. Adjust amount of celery, grapes and nuts to your liking until you get it the way you like.
