Cooked hamburgers or meat of choice--sliced ham, chicken, turkey or buffalo chicken
Cooked French fries
8 slices toast, Texas toast or sandwich bread
1/2 c butter
1/4 c flour
1 tsp salt
1/2 tsp freshly ground black pepper
1/2 c beer
1 1/2 c light cream or half and half
1/2 tsp cayenne pepper
2 c shredded cheddar cheese or Velveeta cheese
1 tsp Worcestershire sauce

Directions:
Directions:
For sauce, melt butter in saucepan. Blend in flour and cook over low heat until mixture is smooth and bubbly. Remove from heat; stir in salt, pepper, beer, cream, cayenne, Worcestershire sauce and cheese. Return to heat, stirring constantly to make a smooth sauce. Keep warm until sandwiches are assembled.

Place 2 slices of toast on serving plate, top with meat of your choice and cover with cheese sauce. Mound french fries on top. Serve immediately.
(A smaller sandwich, using 1 slice of toast, is a Ponyshoe.)

The horseshoe was invented in Springfield, Illinois. The recipe has endless variations--everything from shrimp to turkey. The original recipe called for ham and a fried egg. The shape of the ham prompted the "horseshoe" name.
