1 chopped onion
4 boneless, skinless breasts, cooked and shredded
(Microwave chicken in 1 1/4 c water from frozen state for 15 minutes--save broth.)
salsa or picante sauce
5-6 large flour or corn tortillas
1 can cream of chicken soup
1 cup chicken broth
Monterey Jack cheese (shredded)

Directions:
Directions:
Saute onion. Add chicken and enough salsa to taste. Place chicken filling on tortillas and roll up. Place in greased baking dish. Mix soup and broth together and pour over enchiladas. Top with cheese. Bake at 350º until cheese is melted and enchiladas are heated through.

Also good with taco meat, using cream of celery soup.
