6 oz can pineapple juice
3/4 lb flank or skirt steak
red, yellow and green bell peppers, cut into strips
1 large red onion, sliced
1 c shredded Monterey Jack cheese
4 tortillas

Directions:
Directions:
Pour pineapple juice over flank or skirt steak and cover. Marinate 30 minutes in the refrigerator. Discard marinate. Grill or broil steak with green, red, or yellow bell peppers and onion slices 15 minutes for medium steak or until vegetables are tender. Thinly slice steak. Divide steak, vegetables, and 1 c shredded Monterey Jack cheese among 4 flour tortillas. Roll up.
