6 lbs. short ribs
1 Tbsp butter
1/2 cup chopped onion
1/3 cup dry red wine
2 tsp prepared horseradish,
1 tsp paprika
1/4 tsp pepper
2 Tbsp lemon juice
1 can (10 1/2oz) beef consomme
1/4 cup sifted flour
1 tsp sugar
2 tsp dried dill weed.

Melt butter in 6 quart Dutch Oven. Add short ribs, trimmed of extra fat. Saute, turning, until nicely browned all over. Lift out ribs. Saute onion about 3 minutes. Return ribs to Dutch oven. Stir wine, horseradish, paprika, pepper, lemon juice, consomme, and 1 cup water to mixture. Bring to boil. Reduce heat and simmer, covered, 2-21/2 hours, or until fork tender.
Remove meat and skim fat from surface of liquid. Measure liquid. If necessary add water to measure 2 1/2 cups. Pour back into dutch oven. In small bowl, combine flour with 1/2 cup water, mix until smooth. Stir into liquid, along with sugar and dill weed. Bring mixture to boiling, return meat to dutch oven and simmer covered,for 30 minutes longer. Serve with rice.
