4- large or 8 small Sole or Flounder fillets about 1 1/2 lbs
1 T. unsalted butter
Finely grated lemon zest and juice from 1 lemon
1 T. flour
1 cup chicken broth or stock

1. Preheat the oven to 400ºF
2. In a 9-by-13-inch baking dish add the butter and fillets. Season with salt and pepper
3. Bake until the fillets are beginning to flake at the tail ends- about 7 minutes, depending on the thickness of the fillets.
4. Meanwhile, in a saucepan over low heat, melt the butter with the lemon zest.
5. Whisk the flour and cook, stirring, until the mixture just begins to color, about 3 minutes.
6. Add the broth and the lemon juice and whisk vigorously to break up any lumps. Cook, whisking occasionally, until thick, about 5 minutes. Season to taste with salt and pepper. Arrange the fillets and top off with sauce.

I like to add a layer of asparagus to the bottom of my baking dish and bake the fillets on top of the asparagus, this adds great flavor and you've just added a great side to your main course!
