4 medium Rome apples, cored to within 1/2 inch of base
3 tbsp butter
6 tbsp maple syrup
3/4 heaping tsp freshly grated ginger
4 three-inch-long cinnamon sticks
3/4 cup Ricotta cheese
2 tbsp plus 1 tsp powdered sugar
1/8 tsp ground cinnamon
3 tbsp heavy cream

Preheat oven to 450º. Peel about one inch of skin from the tops of the apples. Cut a sliver off the bottom so that the apples stand well. Place them in a 9x13-inch glass pie plate. Cut one tablespoon of butter into four pieces. Fill each apple core with a piece of butter, one tablespoon maple syrup, 1/8 teaspoon ginger and 1 cinnamon stick. Place remaining two tablespoons butter and two tablespoons syrup in bottom of pie plate. Bake, basting several times with pan juices until apples are golden and tender, about 35 minutes (the skin may split). Transfer apples to a serving dish. Let baking juices stand to thicken, about 15 minutes. Puree Ricotta, powdered sugar, remaining ginger, cinnamon and cream in a blender or food processor. Serve two heaping tablespoons of Ricotta cream to each side of the apple and drizzle with the warm syrup. Makes 4 servings.
