7 crisp, sweet apples (Royal Gala, Rome Beauty, Idared, McIntosh or Jonagold)
2 tbsp butter
1 cup sugar
7-10 large pieces of lemon peel
3 three-inch-long cinnamon sticks
1 vanilla bean
4 tbsp dark-brown sugar
1 tsp ground cinnamon

Preheat oven to 400º. Slice off the tops and bottoms of the apples. Remove the core and seeds with an apple corer. Rub the tops with butter and dip in a bowl of sugar. Butter a shallow 9x13-inch glass baking dish. Arrange apples upright in dish. Insert piece of lemon peel into the center of each apple. Put any extras in the bottom of the dish. Place cinnamon sticks and vanilla bean in the dish. Using a teaspoon, fill apple cavities completely with dark-brown sugar. Sprinkle cinnamon over tops. Bake until small cracks form on rims of apples, about 30 minutes. Makes 7 servings.
