3 lb chuck roast
1 T oil
1 large onion sliced thin
2 T vinegar
1 T ketchup
1 tsp salt
1/4 tsp pepper
1/8 tsp ground cloves
1/4 tsp thyme
1 c water
1 T flour

Directions:
Directions:
Heat oil in heavy skillet.
Brown mean on both sides.
Place sliced onion on top of meat.
Combine and pour over meat the rest of the ingredients.
Cover and simmer until meat is tender, about 2 hours.
Remove meat to warm platter.
Pour drippings into a small bowl and skim off excess fat.
Measure and add water if necessary to make 1 cup.
Return to skillet and bring to boil.
Combine 1/4 cup of the drippings with 2 T flour.
Boil stirring constantly until gravy is thickened.
