1/4 cup of chopped onion
butter
2 cups cooked chicken breast (shredded)
1/2 cup picante sauce
4 oz. of cream cheese
1 t. cumin
1/2 cup cheddar or colby jack cheese
12 corn tortillas
1/2 can of enchilada sauce

Directions:
Directions:
Cook 1/4 cup of chopped onion in butter until translucent. Combine 2 cups cooked chicken breast (shredded) and saute with onion. Add 1/2 cup picante sauce, 4 oz. of cream cheese, and 1 t. cumin. Heat through and then stir in 1/2 cup cheddar or colby jack cheese. Fry 12 corn tortillas in oil. Drain. Use 1/2 can of enchilada sauce and spread at bottom of a 9 x 13 pan. Put 1/3 cup of filling in each tortilla. Wrap and place tortilla in pan with the seam facing down. Cover with remaining sauce and top with more cheese. Make at 350 for 15 minutes.
