(6-oz.) angel hair pasta
3 heaping cups thinly sliced purple cabbage
3 scallions, minced
½ cup slivered almonds
¼ cup vinegar
⅓ cup oil
¼ cup sugar
2 tsp. salt

Directions:
Directions:
Cook the pasta in boiling water, drain and rinse in cold water. Place in a bowl with the cabbage and scallions and set aside. Place the almonds in a pan and toast in the oven at 350°F. Shake the pan periodically and toast until light brown. Cool and set aside.

Dressing: Combine the vinegar, oil, sugar, and salt in a jar and shake well so that sugar dissolves. Toss the vegetables with the dressing and refrigerate. Add the almonds immediately before serving.
