2 cps (12 oz ) semisweet chocolate chips
1 1/2 cps whipping cream, whipped, divided
1/4 cp confectioners sugar
1 tbsp vanilla extract
1 chocolate cookie crust, 8 or 9 inches
whipped cream and chocolate covered peppermint candies, for garnish

Directions:
Directions:
1) In a microwave safe dish, combine the chocolate chips and 1/2 cp cream; cook on high for 1 - 2 mins; stirring every 30 secs until smooth.
2) Cool to room temp.
3) Stir in sugar and vanilla; set aside.
4) In a small bowl, beat remaining cream until soft peaks form.
5) Beat in chocolate mixture on high, 1/3 at a time; mix well.
6) Spoon into crust.
7) Refrigerate for 3 hrs.
8) Garnish with whipped cream ( 8 small puffs in a circle near edge of pie)
9) Put a peppermint patty (peppermint candy) on top of each puff.
