2 lbs. peeled and deveined shrimp
Cornstarch

1/2 c. mayo
1/4 c. Thai sweet chili sauce
3 drops sriracha hot sauce
Shredded Lettuce and scallions

Directions:
Dredge shrimp in cornstarch

Heat oil in deep fryer to 350º. Add shrimp (little by little) and fry till golden brown, about 3 minutes.

Mix mayo, chili sauce and hot sauce. Stir in shrimp. Place the shrimp on a bed of shredded lettuce and top with scallions.

The sauce can't be substituted. To save time, you can substitute store bought pre-battered frozen shrimp.
