1/4 cup onion, chopped
1/2 cup diced celery
1 Tblsp. prepared mustard
1 tsp. salt
Dash of pepper
1 to 2 Tblsp. sugar
3/4 cup salad dressing or Miracle Whip (may add more or less of the dressing)
1/4 cup creamy Italian dressing

4 cups cooked, cooled, and cubed potatoes (about 4 med. potatoes)
4 hard cooked eggs (2 in salad, 2 for top)
4 small sweet pickles, diced (optional)

Directions:
Directions:
Combine first 8 ingredients in a mixing bowl, mix well. Refrigerate. Combine potatoes, 2 eggs, chopped, and pickles. Add to chilled dressing and mix thoroughly. Garnish with slices of hard cooked egg and paprika. Best if refrigerated overnight or several hours to blend flavors.
