1 can (29 oz ) pear halves; drained
4 eggs
1/3 cp granulated sugar
1 1/2 cps milk
2 tsps vanilla extract
1 tsp grated lemon peel
1/4 tsp salt
3 english muffins

Butterscotch Sauce:
1 cp brown sugar
1/2 cp butter, cubed
1 cp heavy whipping cream, divided
1 tsp vanilla extract
2 tsps confectioners sugar
fresh pear slices, opt

Directions:
Directions:
1) Coarsely chop pears; place in grease 9 inch deep dish pie plate.
2) In a large bowl, beat eggs and sugar.
3) Add the milk, vanilla, lemon peel, and salt; mix well.
4) Stir in crumbled english muffins; pour over pears.
5) Bake, uncovered, at 350f for 30 to 40 mins or until the knife inserted near the center comes out clean.
6) Cool slightly on a wire rack.
7) For butterscotch sauce; combine brown sugar and cinnamon in a saucepan.
8) Cook over med heat until butter is melted, gradually add 1/2 cp cream.
9) Bring to a slow boil over med heat , stirring constantly.
10) Remove from heat.
11) Stir in vanilla; set aside.
12) In a small bowl, beat the remaining cream until it begins to thicken.
13) Add confectioners sugar; beat until stiff peaks form.
14) Cut the pie into wedges.
15) Garnish with whipped cream and pear slices on each serving.
16) Serve with butterscotch sauce.
