NOTE- This recipe will depend on your corn. Some cans of corn are real thin and "soupie." To this type you'll need to add more crackers. Maybe even an extra egg. Otherwise follow the regular recipe if the corn is just right.
For each can of corn add one egg
Put into a greased casserole dish. Add one egg
1 cup finely crushed white cracker crumbs
pepper
salt to taste
1/3 cup milk-a little more if the corn is real thick.
Mix well. Sprinkle top with crackers crumbs and dots of butter. Bake in a 350 oven for 1 hour. It will get puffy but will fall as soon as it's taken from the oven. Don't worry, in our family it will get eaten.

This is my input. Beat your eggs with the corn before putting in the crackers. Also, I have put in a can of chilies for a little bite.If you do that, put in a bit more crackers to soak up the "soupie"ness!
Enjoy!

Submitted in honor of Eloise Schmieder, she lost her battle to breast cancer in 2002. She was a wonderful mother, sister, grandmother and friend! She loved being in the kitchen and we miss her dearly.
