1 lg. chopped onion
3T bacon fat, rendered from 1/2 lb. bacon
2 cans creamed corn
4 sm.-to med. potatoes peeled and diced
1 1/2 c water
2 c whole milk or half and half
salt and pepper to taste

Directions:
Saute bacon until crisp in a large pot. Remove bacon from the pan and dice finely. Set aside. Remove all bacon grease from the pan with the exception of 3 T. Turn heat to medium and add diced onions. Saute until translucent, approximately 15 minutes. Add diced potatoes to pot and cover with water. Continue to cook over med. heat, uncovered until fork tender, approx. 15 minutes. Add both cans of creamed corn along with milk or half and half. Simmer on low heat for 10 minutes, Do not boil. Add salt and pepper to taste. Garnish each bowl with diced bacon.
