1 Duncan Hines© cake mix (any flavor: lemon, vanilla, chocolate)
3 eggs
1/2 cup sugar
2 tsp. vanilla
2 lbs. ricotta cheese (part-skim or whole)

Directions:
Directions:
Prepare the cake mix according to the directions on the box.
Put the cake batter in a greased 13 x 9 pan.
In a bowl, beat eggs, sugar, vanilla, and ricotta cheese.
Pour the mixture as evenly as you can over the cake mix.
Bake at 325˚ for about 60 to 70 minutes, until the top is firm.
The cheese will sink to the bottom during baking.
Let cool, and dust with powdered sugar if desired.
