3 T. butter
3 large eggs, beaten
3/4 C. milk
1/2 tsp. vanilla
1/2 C. flour
2 T. sugar
1/8 tsp. salt

Directions:
Directions:
Melt butter in 10-in. ovenproof frying pan. In large bowl beat eggs until pale. Beat in milk, vanilla, flour, sugar and salt. Pour batter into pan and bake until pancake is puffed and lightly browned, 15 to 20 minutes. Slice into wedges and serve immediately topped with berries.

Bake 400º for 15 to 20 minutes.

The pancake puffs up as it bakes and sinks down after it is removed from oven. You can also top with lemon juice and powdered sugar. Makes a delightful dessert as well as lovely brunch.
