Herb Garlic Oil

1/2 cup olive oil
1 Tbs fresh rosemary
1 Tbs fresh thyme
1 Tbs fresh oregano
3 cloves garlic - minced

4 small carrots
8 red skin potatoes
2 ears corn - cut into thirds
2 small zucchini - quartered crosswise on the diagonal
1 yellow bell pepper - cut in large pieces
1 red bell pepper - cut in large pieces
8 asparagus

Directions:
To make the Herb Garlic Oil, in a small jar with a tight-fitting lid, combine the olive oil, rosemary, thyme, oregano, and garlic. Shake until well blended and then set aside. To make the vegetables, preheat the oven to 400º. Bring a large pot of water to a boil over medium-high heat, add salt, then add carrots and potatoes. Cook about 12 minutes. Remove the vegetables, and cover with cold water. Add the corn to the boiling water for about 2 minutes. Then run under cold water. Drain all vegetables well and put on a cookie sheet. Arrange all the vegetables on the same ccokie sheet. Shake the oil and then drizzle it over the vegetables. Roast the vegetables until they are nicely browned about 15 to 20 minutes.
