6 boneless skinless chicken breasts or chicken cutlets
1 cup flour
1 tsp salt
1/2 tsp black pepper
2 eggs
1 1/4 cups bread crumbs (I use Panko)
1/2 cup parmesan cheese
butter
olive oil

Directions:
Directions:
Pound the chicken breasts to 1/4 inch thick (or cutlets). Combine flour, salt and pepper on a plate. On a second plate, beat the eggs with 1 Tbs water. On the thrid plate, combine bread crumbs and parmesan cheese. Coat the chicken with flour mixture, then egg, and then bread crumb-parmesan mixture. Heat 1 Tbs butter and 1 Tbs olive oil in a large saute pan and cood chicken on medium-low heat for 2 to 3 minutes on each side.
